Salvatore, my brother, observed and learned how to prepare grandma's pies at a very young age. We later found out from a few of our older Italian customers that our pizza tasted a lot like "pizza alla casalinga" (housewife-style pizza), "the kind of pizza you'd get in Italy if you were invited to someone's home."
Among the men who left Southern Italy to find their fortunes making pizza, my brother Salvatore has many cherished childhood memories of pizza, made at home by mama and grandma. This pizza was modest, thin-crusted, strewn sparingly with chopped tomatoes from our very own garden and just a little cheese (because cheese was expensive, we was not rich you know), then baked in a pan, stove top style... (mama had no pizza oven).
Well, this tradition is still with our Little Italy Pizza Today! Only now we have lots and lots of cheese and a nice big oven. Mangia!
